Block I: Control programmes for food establishments
This block is designed to comply with strategic objective 2.1:
STRATEGIC OBJECTIVE 2.1: To improve compliance with food hygiene and animal welfare regulations in food establishments.
Block I comprises four programmes, including the official controls carried out on food establishments using inspections and auditing. There is also a specific programme which includes the everyday inspections of slaughterhouses and another which includes animal welfare controls.
Competent authorities must check that food establishments are compliant with all applicable hygiene regulations in order that consumers may receive safe products; if operators are found not to be compliant, appropriate measures are taken to rectify this.
The Block includes the following control programmes:
- Programme 1: General control of food establishments
- Programme 2: Control of food establishment self-inspections
- Programme 3: Control of animal welfare in slaughterhouses
- Programme 4: Control of slaughterhouses and establishments for the manipulation of wild game animals and fighting bull processing rooms
The results of the implementation of these programmes are reported annually in the annual report of the results of official controls.
