Interuniversity Group of Food and Environmental Toxicology

Description:

Toxicology is a multidisciplinary science that studies the safety of chemical substances. The main goal of this science is to assess the risk of any chemical agent that interacts with living beings and may cause an acute or chronic or long-term poisoning, depending on the dosage, frequency, and duration of exposure. Environmental Toxicology studies specific issues related to environmental pollution whereas Food Toxicology focuses on the study of the harmful effects of contaminants or added substances in foods when ingested. In both cases, the permitted levels of contaminants are studied as well as the acceptable intake, in the case of foods.

Teaching:

Doctorate courses in Health Sciences, and in Medical and Pharmaceutical Sciences, Development and Quality of Life; Graduate Degree courses in Pharmacy, in Environmental Sciences, and in Medicine; Post-Graduate Degree courses in Food Safety and Quality, in Research and Diagnosis of Tropical Diseases, and in Marine Biology: Biodiversity and Conservation. All these official university degree programmes are taught at the University of La Laguna (Canary Islands, Spain).

Research:

Their main lines of research are linked to the monitoring and risk assessment of trace elements and toxic metals present in food and environmental samples. They also study the presence of certain anions in food and water, such as fluoride, iodine, nitrates, and nitrites.

Services:

Transferring scientific results and scientific dissemination, collaborations with noteworthy institutions in the field of healthcare in the Canary Islands, such as the Canary Islands Health Service, the Canary Islands School of Healthcare and Social Services, the Official Association of Pharmacists of Santa Cruz de Tenerife, the Canary Islands Institute of Agri-Food Quality, among other institutions.
