PhD in Food Science and Technology. Professor of the Department of Bromatology and Food Technology at the University of Córdoba. Vice-dean of Academic Organization of the Degree in Food Science and Technology of the Faculty of Veterinary Medicine.

His main lines of research are on the microbial ecology of foods; the study of the factors and phenomena that influence microbial behaviour in food matrices; the development and validation of predictive microbiology models; determining food shelf life; the implementation of microbiological criteria and sampling plans; and the development of specialised software and decision-making systems for food quality and safety (MicroHibro and Baseline). He is a member of the EFSA’s Network for Risk Assessment, as well as of several working groups for the drafting of scientific opinions.
