Following the excellent reception from the participants of the Autonomous Communities at the “1st Slaughter Hygiene Workshop” held in February 2016, the “2nd Slaughter Hygiene Workshop” organised by AECOSAN at the Ministry of Health, Social Services and Equality took place on 30 March. The workshop was held in order to publicise the European Commission initiative called “share experiences in slaughter hygiene”.
The purpose of the initiative is to highlight and share all the good practices which are taking place in slaughterhouses in other countries and which may be applicable in Spain. The project is based on visits to slaughterhouses in different Member States from teams of 6-8 experts from various EU countries, accompanied by a representative from the European Commission as the project coordinator.
The aim of the European initiative is to assess “in situ” how work is carried out in other slaughterhouses in Europe and which practices can be imported to other countries. The ultimate goal is to reduce contamination of the carcasses through the promotion of good hygiene practices during slaughter and dressing.
The workshop on slaughter hygiene involved the active participation of experts from AECOSAN, from most of the Autonomous Communities and, in addition to the events at the 2016 workshop, representatives from the meat sector belonging to the associations ANICE, FECIC and ANAFRIC were also invited to attend. The idea was to create a forum of exchange and debate for the selection of the best practices which contribute to improving slaughter hygiene in Spanish slaughterhouses from a holistic perspective, and the study for their coordinated implementation by means of close communication and cooperation at all levels.
